Coconut Tart

My mom brought this home and I HAD to try it. I LOOVE coconut and so does my whole family. It was super easy to make and tastes really good! It is not a huge recipe so you will not be overwhelmed with the pie.


Ingredients:
-Pie shell can be any type you like frozen or graham cracker
-8 ounces of pineapple jam (guava is yum too!)
-2 oz ground coconut, or if your like me and love coconut more works too.
-2 eggs
-4 ounces margarine (1 stick)
-1/4 cup flour
-1 tbls coconut rum or vanilla or almond extract
- add some lime juice and lemon zest to give it more flavor
Directions:
Preheat oven to 350 degrees.
Line a square, or whatever shape pan you like, with the pastry and spread with the jam (If you are using the graham cracker crust then no need for this step).
Beat the margarine and sugar together. Slowly beat in the eggs, Coconut, flour, and flavoring.
Pour the mixture into the pie shell.
Bake for 30-40 minutes. If you are using mini pie shells bake it just under 30 minutes.
